{"id":314,"date":"2006-06-26T17:57:58","date_gmt":"2006-06-26T17:57:58","guid":{"rendered":"http:\/\/localhost\/wp_genova\/?p=314"},"modified":"2006-06-26T17:57:58","modified_gmt":"2006-06-26T17:57:58","slug":"barbecuealooza","status":"publish","type":"post","link":"http:\/\/blog.dongenova.com\/site\/barbecuealooza\/","title":{"rendered":"Barbecue-alooza"},"content":{"rendered":"<p><a rel=\"lightbox\" href=\"\/images\/various\/dons_bbq_bio_pic.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Dons_bbq_bio_pic\" height=\"286\" alt=\"Dons_bbq_bio_pic\" src=\"\/images\/various-small\/dons_bbq_bio_pic.jpg\" width=\"200\" border=\"0\" style=\"FLOAT: left; MARGIN: 0px 5px 5px 0px\" \/><\/a> <em>\u201cGrilling, broiling, barbecuing &#8211; whatever you want to call it &#8211; is an art, not just a matter of building a pyre and throwing on a piece of meat as a sacrifice to the gods of the stomach.\u201d <\/em>&#8211; James Beard<\/p>\n<p>James Beard got it right.&nbsp; Barbecuing and grilling is an art, and it&#8217;s an art I have decided to embrace this summer and share on this part of my blog. <\/p>\n<p><strong>June 27, 2006.<\/strong> On my Pacific Palate program this morning, I talked about the three different barbecues I&#8217;m now using to practise my art.&nbsp; Pictured above is my workhorse grill, the<a href=\"http:\/\/www.napoleongrills.com\/\"> Napoleon<\/a>.&nbsp; It&#8217;s the best grill I&#8217;ve ever owned. It&#8217;s made in Canada and my favorite feature is the infrared rotisserie burner. Many a chicken and pork roast has sizzled to perfection on this grill.&nbsp; What makes it so good? <\/p>\n<p>&#8211; a high quality tubular steel burner<\/p>\n<p>&#8211; heavy duty sear plates and a stainless steel cooking grid.&nbsp; <\/p>\n<p>&#8211; quite expensive, but I haven\u2019t had to replace any of those major components and I\u2019ve had it for about 5 years now.<\/p>\n<p><a rel=\"lightbox\" href=\"\/images\/various\/img_1591.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Img_1591\" height=\"150\" alt=\"Img_1591\" src=\"\/images\/various-small\/img_1591.jpg\" width=\"200\" border=\"0\" style=\"FLOAT: left; MARGIN: 0px 5px 5px 0px\" \/><\/a> My latest aquisition is the Traeger Lil&#8217; Tex. Check out the <a href=\"http:\/\/www.traegerindustries.com\/grill.htm\">website for Traeger<\/a> for a full explanation.&nbsp; This thing is a &#8216;pellet&#8217; grill.&nbsp; An electric augur moves pellets into a smoke chamber and a fan distributes the smoke throughout at an even heat.&nbsp; Use it on high to grill steaks.&nbsp; Use it on medium to make a perfect beer can chicken.&nbsp; And most importantly, use it to slow smoke cuts of meat that benefit from that treatment.&nbsp; Here you can see what I smoked over the weekend, a whole duck, split in half, and some country-style pork ribs that had been smothered in a hickory barbecue sauce.&nbsp; I&#8217;ve also done salmon, trout, and whole pork butts.<a rel=\"lightbox\" href=\"\/images\/various\/img_2001.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Img_2001\" height=\"150\" alt=\"Img_2001\" src=\"\/images\/various-small\/img_2001.jpg\" width=\"200\" border=\"0\" style=\"FLOAT: left; MARGIN: 0px 5px 5px 0px\" \/><\/a> <\/p>\n<p><a rel=\"lightbox\" href=\"\/images\/various\/dongenova.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Dongenova\" height=\"150\" alt=\"Dongenova\" src=\"\/images\/various-small\/dongenova.jpg\" width=\"200\" border=\"0\" style=\"FLOAT: left; MARGIN: 0px 5px 5px 0px\" \/><\/a> The other barbecue I&#8217;ve had a lot of fun with is the <a href=\"http:\/\/www.cobbcanada.ca\/index.html\">Cobb Portable BBQ.<\/a>&nbsp; This little thing is amazing. Invented in South Africa, it&#8217;s called a Cobb, because it was originally fueled by dried corn cobs. All it takes is maybe half a dozen briquettes and you can cook on it for a couple of hours. It&#8217;s excellent for chicken breasts and veggies, has a non-stick grill and it comes with its own carrybag.<\/p>\n<p>On my Pacific Palate program of June 27th, I talked about some great barbecue accessories and gadgets.&nbsp; You can find all of them at <a href=\"http:\/\/www.mingwo.com\/\">Ming Wo Cookware<\/a> in Vancouver, my favourite location in the one in Chinatown.&nbsp; <\/p>\n<p><a rel=\"lightbox\" href=\"\/images\/various\/dualbaster.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Dualbaster\" height=\"243\" alt=\"Dualbaster\" src=\"\/images\/various-small\/dualbaster.jpg\" width=\"200\" border=\"0\" style=\"FLOAT: left; MARGIN: 0px 5px 5px 0px\" \/><\/a> The <a href=\"http:\/\/www.cuisipro.com\/MAIN.HTM\">Cuisipro <\/a>dual baster is neat.
